Rodrigo's Mexican Grill Unveils Major Corona Renovation Ahead of Taste of Corona Appearance

The popular Corona Mexican restaurant is participating in Taste of Corona on June 28th and is hosting a grand re-opening celebration of its newly renovated Corona location on July 1st at 4pm.

JUNE 24, 2024 - (CORONA, CA)—Rodrigo's Mexican Grill, an area favorite for Mexican Cuisine and Southern-inspired cocktails, is participating in Taste of Corona on June 28th and has rolled out major renovations for their popular Corona location.

Rodrigo’s Mexican Grill Corona is excited to announce its participation in this year’s Taste of Corona on Saturday, June 28th. Held at The Shops at Dos Lagos from 4:00 p.m. to 8:00 p.m., this annual culinary event is one of the area’s most anticipated tasting experiences. With attendees and restaurants participating from across Riverside County, Rodrigo’s will be on-site serving signature flavors that celebrate the best of Mexican cuisine. Guests are invited to stop by the Rodrigo’s booth to sample fan-favorite dishes and learn more about what’s new at their recently refreshed Corona location.

Just days later, on Tuesday, July 1st, Rodrigo’s Corona will celebrate the grand re-opening of their extensively updated restaurant with a special ribbon-cutting ceremony at 4pm in partnership with the Corona Chamber of Commerce. The refreshed space features three striking murals created by the talented Southern California artist Ross Boss, honoring Mexican heritage and cultural vibrancy. Additional upgrades include new tile and flooring, a fully revamped bar, updated paint throughout, and design enhancements that bring a fresh and welcoming ambiance to the longtime community staple.

Beyond the visual updates, Rodrigo’s Corona is turning up the volume on entertainment with live music every Friday and Saturday from 6:00 to 8:00 p.m., plus festive Mariachi performances during Sunday brunch at both the Corona and Riverside locations. The restaurant now boasts an expansive patio for outdoor dining and events, along with a large private room perfect for banquets, fundraisers, and special celebrations. Regulars can continue to enjoy the beloved Rodrigo’s Happy Hour, and new guests are invited to experience all the exciting additions firsthand during the grand re-opening festivities on July 1st.
